Once you eat these peanut butter cookies you will never use another peanut butter cookie recipe again. It is so simple to put together, takes nearly no time to bake and is perfect for any occasion or just a quick snack to munch on at home. The best part? You won't spend all afternoon in the kitchen!

Peanut Butter Cookies are HANDS DOWN one of my favorite cookies, I could seriously eat them any time of the day. Needless to say, I'm overjoyed that these cookies take no time to prep, cook and serve. They are delicious with coffee in the morning, served with ice cream, or just by themselves! Sometimes they hardly make it out of the oven before I have my entire family drooling over them, and I must say, they are just as delightful fresh out of the oven when they are still soft and mushy. Be careful not to burn yourself if you just can't resist the urge to dig in though!

Simple 4 Ingredient Peanut Butter Cookies
Yields 18 cookies
Ingredients
2 cups honey roasted peanut butter ( I used Peter Pan brand )
1 cup granulated sugar
1 tsp pure vanilla extract or vanilla bean paste ( I used the paste for a richer flavor )
1 large egg
Instructions
Preheat your oven to 350F
Line 2 baking sheets with parchment paper to place your cookies on and set aside
In a medium sized mixing bowl combine your peanut butter, sugar, and vanilla
Add in your egg and mix until completely combined
Using an ice cream scoop or other scoop device, roll the dough between your hands and evenly distribute your cookie dough balls on your baking sheets
Use your favorite design on top, most people press their peanut butter cookies with the classic cross pattern by pressing a fork to the top.

Bake your cookies for 10 minutes, or until slightly golden around the edges. It takes about 5 - 10 minutes for them to stiffen up a bit once taken out of the oven.
Baking notes
To add a delightful little design onto your cookies it is super simple. I used my daisy Russian piping tip to press the flower into the center, and a scalloped cookie cutter with the center press removed from the center of it. I then pressed about half way down, and used the simple release to create a lovely edge to the cookies!
