Fruit Pizza | A Cool, Refreshing Summer Treat

Fruit Pizza has a sensational crumb base topped with a delicious cream cheese whip and all of your favorite fruits! Indulge in something a little healthier this summer, you won't even know what hit you...


For those of you who are unaware, I am a bit of a health freak! I know... that statement sounds totally ridiculous since I bake every week and most of it is NOT even remotely healthy. I just love to bake, any excuse I can get really... Birthday, Father's Day, Best friend got a new dog ( yes, really 😂 ). This week I had the pleasure of making my cousin an amazing Fruit Pizza for her and all of her lovely coworkers. There would be more pictures, but it was gone before the phone could make it out of the pocket!!

The hand mixer I use is currently on sale, so grab it while you can if you are looking for a replacement! It is a sleek black, 5 speed KitchenAid mixer that has sturdy, more open whisk attachments so you aren't constantly have to get those thicker ingredients unstuck!





 

Fruit Pizza


Yields 1 dessert


Ingredients


For the base

  • 1 cup honey graham crackers

  • 4 tbsp unsalted butter ( melted )

  • 2 tbsp granulated sugar ( or 1 to 1 sugar substitute )

For the cream cheese whip

  • 1 8 oz package of cream cheese ( softened )

  • 1/4 cup granulated sugar ( or 1 to 1 sugar substitute )

  • 1 tsp vanilla extract

  • cool whip or homemade whipped cream to your preferred fluffiness ( I used about 1 cup )

For the top

  • Fresh fruits : raspberries, oranges ( cuties ), bananas, strawberries, peaches

  • lemon juice


 

Instructions

  1. Preheat your oven to 350F

  2. Line the bottom of an 8 inch round pan with parchment paper

  3. In a food processor, crush your graham crackers into very fine crumbs

  4. Add your graham cracker crumbs, melted butter and sugar into and mix until completely combined and your texture resembles wet sand

  5. Pour contents into the 8 inch pan and press firmly with either a spoon, the bottom of another pan, or an object of your choosing that with mash it down in the bottom completely

  6. Bake the base for roughly 8 minutes or until slightly golden brown in color ( it will stiffen as it cools, please allow it to cool completely before trying to remove or add any toppings

  7. While the base is cooling, soften your cream cheese by placing it in a heat safe bowl and microwaving it on each side for about 15 seconds ( don't melt it! )

  8. Add in your sugar and vanilla and whip until cream cheese is lighter and fluffy

  9. Combine the cream cheese mixture with your cool whip/ whipped cream. Keep refrigerated until the base is ready to be decorated

  10. Cut your fruits and brush them with lemon juice to prevent browning on the surface

  11. Assembly time! Place a small amount of your whipped topping on the plate your will decorate your Fruit Pizza on

  12. CAREFULLY remove your base from its pan and place it on your plate

  13. Evenly spread your cream cheese whip over the base of your pizza

  14. Place your fruits of your pizza however you please, and enjoy!


 








 

Baking notes


The best way I have found to remove the base from it's container is to either insert a cake disc that fits into the pan and flip it over, or very gently remove it by placing a rag in your hand and turning it over onto it, then place it on your desired place.


If you try to remove the base before it is ready it will likely just crumble in your finger tips.. If you thought the base seemed cooled and it still does this, try mashing the crumbs in there better because if they are too lose they will just fall apart.


Brushing lemon juice on your fruit is not necessary, especially if you plan on serving it immediately, however it does add a level of freshness that you probably wouldn't expect!


I have not tried making this Pizza with a sugar substitute, but have done so on many other recipes with little to no difference in taste or texture. If you are trying to watch what you eat a sugar substitute is going to be your best option to lighten this up 😊
