Fluffy, Cheddar Buttermilk Biscuits | Easy As 1 2 3

Unbelievably soft and flaky biscuits that are a MUST do! Incorporated inside is just a hint of cheddar and honey to give it some extra oomf, and they are ridiculously easy to prepare. Pair it with some butter, jam, or your favorite gravy and you will see why I make this recipe!


As a southern gal I grew up on a plethora of biscuits and gravy, typically accompanied by a full breakfast feast, so it would certainly be a disgrace if I didn't have my own recipe! And no biscuit is a REAL biscuit until it has been family approved and smothered in your Momma's gravy. If you love biscuits, or are ready to give them a try, I recommend this recipe because it is simple, savory, and just plain delicious!

Fluffy, Cheddar Buttermilk Biscuits


Yields 8 medium sized biscuits


Ingredients


  • 1 3/4 cups All-Purpose flour

  • 2 1/2 tsp baking powder

  • 1 tsp salt

  • 5 tbsp COLD unsalted butter

  • Approximately 1 cup mild cheddar cheese ( freshly grated )

  • 3/4 cup cold buttermilk

  • 2 tbsp honey ( raw & unfiltered )

 

Instructions

  1. Preheat your oven to 475F

  2. Line 1 medium/large baking sheet with parchment paper to place your biscuits on and set aside

  3. In a medium sized mixing bowl combine your flour, baking powder and salt

  4. In the same bowl, cube your butter into smaller pieces and then break it down either with your fingers or a pastry blender into about pea sized pieces

  5. Grate your cheese, then add it into your dry ingredient and butter mixture

  6. Place your mixture in the refrigerator and allow it to cool for 5 to 10 minutes

  7. Meanwhile, combine your buttermilk and honey into a measuring cup for easy pouring

  8. Once you remove your dry ingredients from the refrigerator, pour your wet ingredients on top and start mixing with a rubber/silicon spatula ( biscuits have a very dry texture, be patient in letting it fully combine and it will get there eventually 😊 )

  9. Here comes the messy part, be sure you have an apron on!

  10. Flour a clean surface, as well as a rolling pin and roll out your dough to about 3/4 inch thickness ( you will have to re-flour your surfaces several times )

  11. Now cut your dough into 3 ( mostly ) equal sections and lay them on top of each other

  12. I recommend re-flouring your surface after each "turn" of rolling and stacking your dough to ensure it does not stick

  13. Roll your stacked dough back out and cut it in thirds again

  14. Stack the dough and roll it out for a third time, at this point you can repeat the process to your preferred layer amount

  15. Flour your biscuit or cookie cutter and cut out your biscuits, placing them on the baking sheet as you go

  16. With the leftover dough you can ball it together and redo the layering process previously described in steps 10-14

  17. If your dough has warmed up too much, you will want to chill it again before you bake the biscuits ( I will explain why in my baking notes )

  18. Bake your biscuits for 9 minutes, or until slightly golden and layers are visible

  19. Enjoy!


 





 

Baking notes


Using cold butter creates those beautiful, flaky layers as it melts in the oven and creates steam. This is why it is essential to cool your butter and flour mixture before you work with the dough. Your hands, as well as the friction created by the rolling pin and your surface will naturally create heat and warm up your dough. As long as you can still see little flecks of butter within your dough it isn't overworked and will still create lovely biscuits!


The cheese you add is really just your personal preference, but since me and my entire family LOVE cheese I tend to add quite a bit as you can see by the pictures. You can also try adding some cracked pepper or a bit of sugar for some extra zing or sweetness.
